Of all the hands-on things to do in Kyoto, forging your own knife is the one you carry out the door and keep using for years. It’s also a direct line into one of Japan’s deepest crafts.

A sword-smith’s pedigree

Japanese kitchen knives descend straight from the country’s swordsmithing tradition. When the 1876 Haitōrei edict banned the wearing of swords, generations of sword-smiths turned their skills to cutlery — and the result is the blades the world’s chefs now covet. They’re forged from high-carbon steel (hagane), often laminated to a softer backing, which is what lets a Japanese blade take and hold an extraordinary edge. The two great blade towns are Sakai, near Osaka, which makes the bulk of Japan’s professional chef knives, and Seki in Gifu — but Kyoto’s smiths keep the same lineage alive.

What you actually do

This isn’t a demonstration. You stand at the forge, heat the steel, and hammer it to shape yourself, then refine and sharpen the blade under the smith’s guidance. It’s hot, physical, and absorbing — and because you do the work, the knife that comes out is meaningfully yours. No experience is needed; the smith scales the work to you.
